Monday (errr. Wednesday) Menus

This dish was served at a baby shower for Jeffra Kill and Marie Hammill wanted the recipe.

German Potato Pie 

1 cup sauerkraut, squeezed dry 

2 baking potatoes, peeled, grated squeezed dry

8 slices bacon, cooked and crumbled

2 tsp. caraway seeds (I didn’t have these)

salt and pepper

4 large eggs

1 cup heavy cream

I also added 1 c. cheddar cheese though it wasn’t listed in the recipe

One 9 inch prepared pie shell.

Preheat oven to 375. Beat eggs and cream together then stir in other ingredients. Pour into a pie shell and bake for 35 minutes or until golden. Serve warm or at room temperature ( I like warm!)
