Monday Menus

After many requests for the recipe for this very easy salad, here it is.

WHOLE GRAIN FRUIT AND NUT SALAD

1 cup of whole grain–spelt, wheat, rye, or any combination

2 cups water

Add grain to the water and bring to a boil. Turn down to a simmer and cook for 45-60 minutes, until all of the water is absorbed.  Cool and add the following ingredients:

1 1/2 cups sliced strawberries

1 cup blueberries

3/4 cup chopped pecans

1/2 cup dried cranberries, any flavor

2 cans or jars of mandarin oranges

Toss all of the ingredients together and then add Raspberry Vinaigrette dressing or Raspberry Pomegranate dressing.  Add enough to taste.   Chill then serve.

You can add other fruits and or nuts, depending on the season and your tastes.  When I make this in the winter, I leave out the strawberries and blueberries and add more dried cranberries.  I am sure any fruit will taste good in this salad.  I have made it with spelt, wheat, a mixture of rye and wheat, and a 7-grain mixture that I have, but I like the spelt the best.  No matter where I take this, people like it, and they are always surprised at how tasty it is.
