Menu Monday–Molly’s recipe

Below is a recipe from Molly Vaillincourt.  She says, “It is the yummiest thing I have ever tasted and is super easy.”

2 pints cherry tomatoes
3/4 c small diced red onion
2 T. white wine vinegar
3 T.  olive oil
1 1/2 t kosher salt
1/2 t black pepper
2 T. chopped fresh basil
2 T.  chopped fresh flat leaf parsley
3/4  lb. feta cheese

Cut tomatoes in half. Place in large bowl. Add onion vinegar olive oil, salt, pepper, basil, parsley and toss.  Cut feta into 1/2 in cubes fold into tomatoes.  Serve room temp.  yummm
