Monday Menus

The following recipe is one of Grant’s favourites. I got this recipe from

Baked Chicken Nuggets

Serves 6

3 skinless boneless chicken breasts or 1 1/2 pounds chicken tenders

1 cup of Italian seasoned bread crumbs

1/2 cup grated Parmesan cheese

1/2 teaspoon salt

1 teaspoon dried thyme

1/2 teaspoon dried basil

1/2 cup butter melted (can also use buttermilk, beaten eggs or milk, enough so that you can coat the chicken)

Preheat oven to 400 degrees F.

Lightly grease a cookie sheet.

Rinse the chicken under cold water.

Cut the chicken breasts into 1 1/2 inch size pieces or if using chicken tenders just cut them in half  or not at all.

In a medium bowl or dipping tray, mix together the bread crumbs, cheese, salt, thyme and basil (mixing well).

In another medium bowl or dipping tray put the melted butter or whatever you are using to coat chicken.

Dip chicken pieces into the melted butter.

Then coat with the breadcrumb mixture.

Place the coated chicken on a lightly greased cookie sheet in a single layer.

Bake in the preheated oven for 20 minutes.

Serve hot.
